A Royal Wedding Cake | BRIDES Magazine: A Wedding Fit For A Royal

This past winter I was commissioned by the editors of BRIDES to come up with a modern version of a royal cake a la Grace Kelly, the princess & style icon so admired and well known for her impeccable taste and demure demeanor. As you know, a new movie Grace of Monaco, starring Nicole Kidman, will premiere this Spring.

From the pages of BRIDES: Inspiration for a modern day royal wedding.

I decided to use hexagon shaped cake tiers to give the wedding cake a more architectural look, and I added 3 spacers for height.  Each fondant-covered spacer was surrounded by gilded gum paste acanthus leaves. Royal wedding cakes traditionally feature their coat of arms; I came up with a simplified 3-D version of the Monaco Coat of Arms in white and gold. I also added a small sugar crown at the top to serve as a base for a spray of Lily of the Valley, which I handcrafted from sugar. Princess Grace carried these delicate blooms on her wedding day, which seems to be a favorite among royals. Another recent royal bride, Kate Middleton, carried a bouquet of Lily of the Valley on her wedding day as well.

The Lily of the Valley theme is repeated throughout the cake, as you can see on the wedding cake sides, which were embellished with brushed embroidery painted with edible pearl dust. A gum paste monogram plaque with gilded initials is surrounded by tiny white gum paste leaves to resemble a laurel wreath.
